    • 1 cup uncooked PachaMama fonio flour
    • 1/2 cup water
    • 1 cup all-purpose flour
    • 2 tablespoons granulated sugar
    • 2 teaspoons baking powder
    • 1 teaspoon kosher salt
    • 2 large eggs
    • 1 cup milk
    • 1 teaspoon vanilla extract
    • 4 tablespoons unsalted butter, divided, plus more for serving
    • Maple syrup, for serving



    Add 1 cups all-purpose flour, 1 cup fonio flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, and 1 teaspoon kosher salt, and stir to combine.


    Melt 2 tablespoons of the unsalted butter and place in a medium bowl. Add 2 large eggs, 1 cup milk, and 1 teaspoon vanilla extract, and whisk until combined.


    Melt 1/2 tablespoon of the unsalted butter in a large non-stick pan frying over medium heat. Swirl the pan so the butter coats the pan. Drop 2 to 3 (1/4-cup) portions of the batter into the pan. Cook until golden brown, 2 to 3 minutes per side. Transfer to a plate or 200ºF oven to keep warm. Repeat cooking the remaining batter, adding 1/2 tablespoon of the unsalted butter to the pan between batches. Serve with more butter and maple syrup.
