Recipe Name: Fonio Jollof
- 2 large/3 small bananas mashed
- 2 large eggs
- 1/4 cup maple syrup/honey
- 1 cup preferred milk
- 1/4 oil or melted butter
- Dry ingredients:
- 1 & 1/4 cups PachaMama fonio flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
Mix all dry ingredients together in a bowl and the wet ingredients in a separate bowl.
Make a hole in the dry ingredients and pour in the already mixed wet ingredients.
Mix together until even.
Clean and dry your baking pans and grease them with a little butter.
Heat the oven for about 5 to 10 minutes.
Pour the batter into the baking pans and level it with a spatula.
Set oven on medium heat.
Put the batter in the oven and allow to bake for 15 to 20 minutes.
Your fonio cupcakes are ready. Allow to cool and serve.
